Nicole has a lifetime of experience in the hospitality industry, stretching back to her childhood in Hamburg, Germany, where her parents owned and managed several restaurants. After working with Hilton International properties in London, New York and Guam, she moved to Chicago where she served as The Drake Hotel’s Director of Catering and Convention Services and then the General Manger of the prestigious Mid-America Club.
Gabi has been passionate about the hospitality industry from a young age and comes from a long line of caterers, bakers and entertainers in Germany. She began her professional career at the Hotel Dorint in Garmisch-Partenkirchen Germany before heading to Namibia to work as a house supervisor and chef at a game resort. She then spent a number of years in hotel and restaurant operations in La Palma in the Canary Islands and Empuriabrava Spain before heading stateside to Chicago. In her 12 years here Gabi has worked with a wide variety of renowned restaurants and catering companies serving most recently as the Director of New Business at Pure Kitchen Catering. When not working Gabi can be found cooking for friends and family or participating in the local Culinary Fight Club.
Mary has had a passion and curiosity for world cuisine for as long as she can remember. Whether she is cooking authentic Thai dishes with her mother or learning proper French cooking techniques in Paris, Mary is fascinated by food and travel. She parlayed this hobby into a successful career in hospitality and has executed over 100 events in her 10+ years in the industry. She has worked with many of the top caterers in Chicago and is excited to plan a wide range of creative weddings and events at Lacuna. When not working, or traveling, Mary loves to entertain and cook for family and friends.
